How to take advantage of paella leftovers

After a family meal there are always left over and with them the concern of what to do with these. Paella is one of the most recognized Spanish dishes worldwide and it is one of those foods that are made in abundance, in most cases it is usually frozen to be reused at another time, however there are more creative ideas to take advantage of them. It is important to highlight that the paella lasts up to 7 days in the fridge stored in a refractory container. Stuffed peppers

  • 100 gr of cheese for gratin
  • 6 peppers of the color you want


Wash and dry the peppers, cut the top horizontally and remove the seeds and white parts. Preheat the oven to 180 ºC and place the already cut peppers on a baking dish. Season the peppers with salt and pepper and fill them with leftover paella. Bake for 20 minutes, you must ensure that they do not burn, once they are cooked take them out of the oven. Let them stand for a moment and serve. In case you don't like peppers, this recipe can also be prepared with piquillo peppers, since its flavor is softer or with tomatoes.

Rice croquettes

Croquettes or rice balls are a classic of Sicilian cuisine and become a perfect idea for take advantage of paella leftovers, not only rice but seafood or meat, depending on the type of paella you have made.


  • Leftover Paella
  • 3 egg yolks
  • 100 grams of pecorino cheese
  • 30 grams of butter
  • 1 onion
  • Bread crumbs
  • 1 cup of red or white wine, depending on the filling you are going to use.
  • 2 eggs
  • Olive oil


Place the rice in a bowl and add the yolks, cheese and mix very well. At this point you can pass the croquettes for egg and breadcrumbs and fry them, however, you can also fill them with the seafood or meat scraps. In this case, cut the onion and fry it with olive oil and butter, put the stuffing you have left over and saute over high heat, add the wine and let it evaporate. Season with salt and pepper and as the filling will already be cooked, it is not necessary to leave it too much in the fire. With the cold rice place a little in the hollow of your hand, put the filling in the middle and cover with the rest of the rice. Heat a pot with oil and run the croquette through the egg and breadcrumbs. Fry the croquettes, let them cool a little and they are ready to eat.

Rice tortilla

The tortilla is also an emblematic dish of Spain, so in this case you will have two international meals in one. In this case you will need:

  • Pepper
  • Oil

Reheat rice

This is the most common way to take advantage of paella leftovers and the easiest. However there are several techniques to reheat the paella:

  • With oil: Add two tablespoons of oil to a pan, add the rice and sauté a little.
  • With water: either to reheat in the microwave, in the pan or in the paella pan. You just have to add a splash of water to the rice and heat.
  • Maria's bath: Place a pot with water and boil. Place a strainer on top of the pot and put the rice in it, without coming into contact with the water. In this way the steam will heat it and it will not dry out.
