How to keep chanterelles

The raw chanterelles They can be frozen without problems. Clean them well, cut them into pieces and store them in an airtight bag. Then put them in the freezer until you decide to use them. There are those who prefer to keep the fried chanterelles. This will allow them to be almost ready so that when cooking you just have to add them to the preparation without previously passing them through the pan. If you want to keep them like this, clean the chanterelles and cut them into pieces. Place them in a pan with a tablespoon of olive oil and let them cook for five minutes so they have a cooking point. Wait for them to cool to store them in an airtight bag and put them in the freezer.


You can also keep the chanterelles seasoned in a glass jar. In this case you must clean and chop them and, simultaneously, prepare a pot with plenty of water, salt and bay leaf. When the water is boiling add some chanterelles, wait a minute and take them out. Repeat this procedure with all the portion you want to keep. Once you're done, deposit the chanterelles in glass containers and add some of the water where you boiled them. Finally, cover the glass containers and place them in a pot with boiling water for 40 minutes. After this time, let the containers cool and your chanterelles are ready. You can store them in the fridge or leave it at room temperature.
