Bone turkey leg, to remove only the thigh bone. Ätalo with kitchen thread, season it with salt and pepper, a little of alecrín, the wine and the juice of the oranges and let it marinate overnight.

Peel the onion and carrot and cut them into large pieces. Place them in a bowl and overlap the meat with the marinade. Place it in the center of the oven at 180º C, for 45 minutes. Water it occasionally with the roast juice.

Meanwhile the Christmas turkey is baked, fry the chestnuts in the hot oil. Heat the green broth in boiling water and drain it. Place a pan on the fire with a little oil. Add the garlic and the chopped bacon. Cover it with the green broth and skip it, seasoning it with pepper.

Cook the potatoes with the skin in salt water. Remove, peel and brown slowly in the remaining oil. Remove the meat from the oven. Add the roast vegetables in some water. Let them boil, crush them and pass them through the pass-through.

Serve roasted turkey thigh with chestnuts, potatoes and sauteed cabbage with bacon. Water it with the juice and decorate it with the remaining alecrin.
