How delicious is the potato omelette! I remember that as a boy it was one of my favorite foods and my mother always made it accompanied by good chops. Today, years after that, it is still one of my favorite foods, and although things have changed (when I can, the one who prepares the tortilla at my parents' house is me) I still enjoy this classic recipe of the old kitchen. Today, I will try to explain how to prepare a classic potato omelette the easiest way.3 people 45 minutes Low difficulty Ingredients:
- 3 medium potatoes (about half a kilogram)
- 1 medium onion
- 4 eggs
- Salt and pepper to taste
- Potato frying oil
We start by cutting the “Spanish” potatoes (4mm fetas)2
Once the potatoes are cut, we fry them until they dry (no need to brown them)3
It is not necessary, but if you want, you can leave them like me. By the way you can use absorbent paper to get a little oil from the potatoes.
For now we leave the potatoes there, waiting.4
Meanwhile, we must cut the onion into cubes or half a julienne ...5
And put them to brown in a pan, until they are transparent.6
While they are browned, take the opportunity to beat the 4 eggs in a bowl, with salt and pepper to taste.
Once the onions are golden, add the beaten egg and the potatoes as the picture shows.7
We cook at minimum / medium heat, checking the bottom with a spatula so that it does not burn ...8
With the help of a plate, we have to support it on the pan and then, turn the pan over the plate. After that we have to place the part that was above without cooking (now below) on the surface of the pan, so that it is browned again.
As you can see I like the top part (which will be the bottom one when I present the dish because I will turn it over again) well browned.9
Cook over low heat for 5 more minutes ... Take out, and present the dish.
