Desalinate the cod in a bowl with plenty of water, and change the water three times every 12 hours.

Boil the peeled and sliced potatoes, with a pinch of salt for 20 minutes. Reserve.

Then, in a wave, heat the milk with the bay leaf and the peppercorns. Add the cod and cook for 10 to 15 minutes, without boiling the milk.

After this time, drain the cod, reserving the milk, being careful not to leave any bay leaf or peppercorn. Reserve.

Laminate the garlic and brown them in a pan with hot oil. Reserve.

With a turmix or kitchen robot, mash the potatoes and the cod, linking them with garlic. Add the cod's milk to facilitate the crushing and give more taste to the bran. Let cool.

In a pot, mix the grated tomato with sugar and a pinch of salt and pepper. Cook for 30 minutes over medium-low heat, until you get a texture similar to jam.

Toast the bread well, and spread generously with branded and brown in the oven at 200 ° C for 5 minutes.

Present the cod roasted toast with a little caviar or similar.
